My mom gave me this recipe years ago. It has become a Christmas morning tradition around our house, but it’s delicious any time and great to take to breakfast gatherings.

Christmas Egg Casserole

5 eggs

¼ cup flour

½ tsp baking powder

¼ tsp salt

½ pint (8 oz) small curd cottage cheese

½ lb Monterrey Jack (or Colby Jack), shredded à 2 cups

¼ cup melted butter

4 oz can mild green chiles, drained (or spice it up with Rotel)

Beat eggs until light; add flour, baking powder, salt, cheeses and melted butter and blend until smooth; add chiles.

Pour mix into greased 9" square or other shallow casserole dish (a quiche or pie plate works fine, too). Bake at 350F for 30+ minutes or until top is lightly browned and center appears firm. Serve hot. 6-8 servings.
